The professor’s green smoothie

A green smoothie is the perfect solution when you are short on time and want to make sure to get some nutrition and healthy plant fibre in your meal. This recipe works both as breakfast and as a snack, and it takes no more than a few minutes to throw together. The result is a smooth green drink filled with healthy fats from the avocado, vitamin C and magnesium from the kale and fibre from the oats. In other words – perfect food for your healthy gut bacteria!

Taste tips

If you struggle with liking the green flavor, you can always add a piece of fruit to the recipe – an apple or mango is our go-to. A tablespoon of raw cocoa powder is another option for those who like chocolate. If you have a strong blender, you can also add a piece of the avocado kernel as it provides an extra boost of antioxidants, soluble fibre and healthy fats. The kernel has a slightly bitter taste so start with a quarter of the kernel, do a taste test, and add more as you go.

The recipe is for 3-4 glasses – (Can’t drink it all in one sitting? Just cover it up and store in the fridge until the next day)

Green Smoothie Recipe

Ingredients

  • 300 grams of kale
  • 1 litre of water
  • 2 avocados
  • 2 dl oatmeal
  • ½ lemon
  • 2 cm ginger (without the peel)

How to make the smoothie

  • Put all the ingredients in a mixer and blend until everything is smooth.
  • Serve in a glass, drink up, and listen to your gut bacteria cheering!
